Zucchini Cake



*Oven at 350
  • 3 eggs
  • 1 cup veggie oil
  • 2 cups sugar
  • 2 cups zucchini (shredded)
  • 3 tsp vanilla
  • 2 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 3 tsp cinnamon
  • 1 1/2 cups chopped walnuts (optional)

Mix all ingredients, zucchini last. Pour into greased 13x9in glass/metal pan at 350 for 30-35min.

Cream Cheese Frosting


  • 1 pkg cream cheese
  • 1/2 stick butter
  • 3/4-1/2 cup confection sugar (powdered sugar)
  • 1 tsp vanilla
  • Blend to creamy desire.
